Recipe for Key Lime Muffins

Key Lime Muffins are a tangy and tasty way to start the day for breakfast, and they make a perfect snack any time!

  • 2 cups All-Purpose Flour

  • 1 cup Sugar

  • 1 tbsp Baking Powder

  • 1/2 tsp Salt

  • 1/3 cup Milk

  • 2 large Eggs, beaten lightly

  • 1/4 cup Vegetable Oil

  • 1 tsp Lime Rind, grated

  • 1/3 cup Key Lime Juice

Preheat your oven to 400 degrees F.

Sift together or stir well the first four ingredients in a medium mixing bowl.   Make a well in the center of these dry ingredients.

In a different mixing bowl, combine the milk, beaten eggs, oil, lime rind, and key lime juice and stir well.
Pour the liquid ingredients into the well you made with the dry ingredients and stir until just moistened.
Spoon batter into muffin cups lined with cupcake papers, or lightly greased.  Fill the muffin cups three-quarters full.

Bake in your preheated oven for 18 minutes, or until the muffins are lightly browned.

Turn muffins out of the pan immediately, and enjoy!
